Turn the broiler on High. Lightly oil a 9 1/2-inch pie plate.
Layer the thinly sliced potatoes into the pan. Drizzle with the olive oil. Add salt and pepper. Put into the broiler for 10 to 15 minutes or until they are soft with crispy browned edges.
When the potatoes are finished cooking, turn off the broiler and turn on the over to 425 degrees.
While the potatoes are cooking, crack 6 eggs into a mixing bowl. Add a quarter cup of milk (your choice). Whisk with a fork until the whites and yolks have combined and started to show tiny bubbles. Add the nutmeg and shredded cheese. Set aside.
In a pan, or skillet, add any raw vegetables and meat first. When they are half-way cooked, add any cooked veg you have. This will make certain that your ingredients are all the same temperature when you add them to the eggs and potatoes.
Once all the meat and veg are heated through, pour them over the potatoes, covering everything.
Add the egg mixture over the top of the potato, meat, and veg mixture. Put into the oven to bake for 15 minutes, or until the Frittata is golden brown and fluffy.
The eggs will rise in then oven when baking and settle a bit after it starts to cool.
