  1. Heat oil in a large saucepan over medium heat. Add rice and stir constantly for 1 minute.
  2. Add onion, garlic, salt, pepper, and cumin, still stirring constantly for 30 seconds while the rice is browning.
  3. Then, add the tomato sauce, broth, cilantro, and bag of frozen vegetables.
  4. Stir once, then put the lid on and turn the heat down to medium-low for 20 minutes.
  5. Do Not Open the Lid during the cooking times.
  6. Once the 20 minutes is up, turn the heat off and leave the lid on for another 10 minutes.
  7. Remove the lid and fluff the rice with a fork.
